This is my favourite lunch atm! I can't tell you how much our kids love this! They scream for me to make it which is so weird as it's super healthy!
I learned how to make it when we went to Korean church. It's called Bi Bim Bop and it's basically a warm rice bowl - sometimes I'll use cauliflower rice.
Here's how to make it!
You need rice or cauliflower rice for the base.
To make cauliflower rice, put raw cauliflower into your blender or Ninja etc with a clove of garlic. Pulse until you get a rice like texture. Pan fry in a frying pan lightly.
Otherwise sticky sushi rice works a treat with this recipe!
Chop up carrots and cucumber into sticks.
Chop up 4 spring onions, green parts and all and lightly pan fry in a bit of oil, Korean paste if you have (not necessary if you don't) some garlic and a mini handful of sesame seeds. You want the spring onion to be a little crispy.
Remove from heat and then throw in some protein of your choice and cook, warm through.
I like to use tofu but will do beef or chicken for Mark.
Assemble in a noodle bowl and add a handful of baby spinach and a handful of bean sprouts.
Next is the best part.... yummmmm!!!
Combine half a cup of sesame oil with a quarter cup soy sauce or coconut aminos. Add a spoonful of sweet chilli sauce and a tablespoon of lemon juice. You can add a fresh red chilli finely chopped if you like spicy. Add a teaspoon of sesame seeds.
Pour over the top of you Bi Mim Bop Bowl.
